Ingredients:
- 2 Sliced Courgettes / Zucchini
- 1 cup slit Baby Corn and Asparagus
- 1/2 cup Sliced Bell Pepper / Capsicum
- 1/2 cup Cottage Cheese / Paneer Strips
- 1/2 cup shredded Lettuce
- 1 Avocado ( Sliced )
- Few sunflower, hemp, flax seeds/ Nuts (optional)
- Few herbs like Coriander, Basil, Mint
For Dressing:
- 2 Teaspoon Olive Oil
- 1 Teaspoon Lemon Juice
- Salt
- Pepper
- Chili Flakes
Method:
Grill the veggies and paneer strips on a griddle from both sides until tender crisp. Mix all the ingredients f the dressing in a jar. Combine grilled veggies with nuts/seeds and herbs. Add the dressing and toss it gently.
Serve fresh with optional grating of cheese. You can add or subtract any veggies as per your likings
